Coffee Cake, Double chocolate muffins and Scones

Hello again :)

Happy post Mommy's Day. I hope everyone was able to spend it alongside their mother's, and if not, I hope you shared sweet words, as that is just as beautiful  :)  We only have our parent's in our lives for so long, try to capture every moment you can!

Ok, off we go! We had a good start today. We made chocolate with chocolates and used more chocolates as the main ingredient ;) .. This is what you get when you do that.


Need I say more? Ok fine, we made double chocolate muffins. Hmmm, I wonder if there is like a quadruple chocolate muffin? Cuz, if there is, I am standing in line to become its BESTEST Buddy EVER!!
We used the creaming method for these. Chocolate deserves two pictures :)



It has been a while since we have done anything so basic, that I kinda messed it up for my group by trying to use a whip! Hello!! We fold, not whip! You think I would know that by now! Sorry ladies, but those muffins still came out delicious. 

You want to give them a try? Here is the recipe for you

Ingredients:

5 oz BUTTER
5.5 oz SUGAR
8 oz SEMI SWEET CHOCOLATES
2.5 oz EGGS
12 oz FLOUR
.25 oz BAKING SODA
.07 oz SALT
10 oz BUTTERMILK
6 oz CHOCOLATE CHIPS ( to mix in to the batter at the end)

Use the creaming method to make these and bake at 350 degrees F.

We also made these lovely scones. The girls and I added chocolate chips to them. Shocker, I know.... We made our first batch and they did not come out looking right. So we took our time the second time around and they came out much, much, much better!  Not to mention that we made the first batch with raisins!! Ummm Really??? There was chocolate available and we actually chose raisins. Thank goodness Batch #2 existed and that we came to our senses. :)


If you like scones, hit me up for the recipe. You can add whatever you like into them. My friend brought me some Scones from Trader Joe's in California, I think they were Orange and Coconut Scones.... they melted in my mouth. Ok, and straight to my hips too, but who's trying to have that realization? Yea, not me.  My point? I love scones. That was it, lets move on. It's not ALL ABOUT ME. I knooooww....

And last but never least... anything that you can have with a cup of Joe is good.. so bring on the Coffee Cake :)
LuLu got creative and added a Raspberry swirl.  Andrea and I are cinnamon sugar freaks... I have not taken a bite out of this as I prefer to give it to my daddy. :) 
Getting chunky is worth it!

  3. Ok ok...in the first picture the muffins looked good but then I scrolled to the second picture and those make my mouth water...YUM! Hope your Mommy Day was a great one :) The cakes look yummy too but I honestly don't know how you do it...all this baking and you still maintain your figure. By now I would have looked like the Blueberry chick in the Willy Wonka movie ;)
