Let's keep the learning process going!

Hello Hello!

Spring Break is officially over and I have my tan to prove it! I welcomed the well needed relaxation period but now its time to get back into it.  Uniforms are clean and pressed, books are in the book bag and my Pastry kit is ready to go into use again.We start our new class tomorrow, Baking Principles and Viennoiserie.
I do look forward to learning how to make breads.. and eating them too ;)  

Oh! And I can not forget!  WE have received two A's thus far.  Whooo Hoooo!! That feels awesome!  I'm going to aim for a third.  :)  It will be a big learning day tomorrow so make sure to check back in.

Awesomeness over my break: My dad took some of my icebox cookies to work last Friday and a colleague asked for the recipe! She thought they were delicious and I happen to strongly agree. :)  Here it is if you want to give it a go!

Ice Box Cookies:

10 minute prep
Oven at 375 F

1 cup of butter
1/2 cup of sugar
1/2 cup of powdered sugar
1/2 tsp of salt

2 large eggs
1/2 tsp vanilla

1 1/2 cups of Pastry Flour

Cream the Butter, sugars and salt in a bowl.  Add in the eggs and vanilla and continue to mix.  Then add the pastry flour and mix again. Cool before rolling out.

To make a chocolate cookie, simply add 4 oz of cocoa to the above sugar mix when creaming.  If you want to make 1/2 chocolate and 1/2 vanilla to create swirls or checkered cookies, cut the above recipe in half, add 2 oz of cocoa to the sugar mix to create your chocolate batch; Make the other half without adding in that cocoa.  Now you have two separate batches that you will cool in the refrigerator, individually wrapped.  Roll out each and get creative! You can make swirls, stripes or the famous checkered Ice Box Cookies. Checkered takes a little longer to make but they are appealing to the eye. :) You can see my checkered cookies below in the history of my blog.

  1. 2 A's That's AWSOME!!! Of course I'm not surprised, knowing what you can do when you put your mind to it. For now just one request...like the cheesecake (which by the way was Wonderful)I Looooove French Bread so when you make it, save me a piece Pleeeeese ;)
