Picture Perfect Checkered & Swirled cookies

As you can see, we created the IceBox Cookies today. This was a team effort project. I made those center swirls you see in the pic, with the chocolate trim on the outside. :) These were the cookies that frustrated me yesterday because they are made of butter.  You put them overnight in the ICEBOX  (wink wink), also known as the cooler in todays hip world.  When you are ready to shape them into the designs above, you take them out of the cooler and roll them out.  If they sit out too long they can become a little messy.  When I was shaping mine yesterday, they would keep breaking.  I have a problem with trying to make everything as perfect as I can get them.  My man and my family can tell you that once I see that they are not little perfections, I shun the poor things. I won't even look at them twice. Sad, I know.

But these were good. :) I was quite happy with them and our team did an awesome job! They taste delicious. We also made Almond Macaroons today which also tasted yummy. I wont show you a picture because they smashed in my backpack between books. Tee hee.. note to self, buy Tupperware.

Oh, and major news, for me that is, we got to use a mixer today!!! That's HUGE. I don't mind doing everything by hand, I actually prefer it. For Macaroons though, since you are whipping egg whites to a certain point, a mixer is heavenly to use. As much as I love baking, I do not own a mixer. Maybe Santa will bring me one this year.Hey, a girl can wish. I have been good you know, and that has to count for something.

  2. Whoo Hoo!!!! Your First Week! Congrats to all your fellow students but just let me say, your cookies looked like they could me used for a magazine shoot.

    That particular cookie process sounds difficult but I do have a question. Can you add pieces of nuts and still have the same outcome?

    Just two more coments...I agree you do have that slight issue with feeling you have to be perfect with what you bake but just remember, its not the poor little imperfected cookies fault. Feel love and compassion for the little things and if you just can't then bag those suckers up, bring them home and know your family and friends will NEVER shun them.

    Also, be careful what you wish for ;)

    Am so loving this blog! If I was on a diet it would be like cheating! YUMMY!!!
    Your cookies look beautiful! I look forward to more pictures and fun facts about baking. As for the perfect problem... AGE will change that! lol and asking Santa for a mixer... make sure it's a KITCHEN AIDE! (hint hint Sal). They come in colors now and do everything but wash the floor! I never had one but I look at pictures! lol Keep up the good work and sharing with us! Love you!!
    P.S. Look for my daughter to join Nicole Oconnell, she loves baking and will be taking a class this spring!

  6. @ Sal, aww thank you! I love being your Nation ;). If I cant be with you then I better be baking and learning non-stop!

    @Cindy, ok, ok... I will bag those imperfect babies up! haha.. cuz they will be shunned by me, sorry! Its just how "I do". In regards to adding nuts, i would not recommend as the beauty of the cookie are the swirls and the checkers. BUT you totally can! Maybe with some left over Vanilla dough, you can add in the nuts, then cover your checkered block or your rolled swiry, COOL, and then cut. It may look cute! Its something to definitely try.
